This Week's Pairing

Domaine de Pouy 2006 and Aged Goat's Milk Gouda.

Domaine de Pouy 2006. Ugni blanc gets a bad rap. There's the mere sound of the grape - pronounced in French, it sounds like little more than a grunt followed by "blah" - and the fact that its main claim to fame is as one of the base grapes for Cognac. But in the hands of Yves Grassa, who blends it here with another local variety called colombard, it makes a bright, zingy little white that's built for spring drinking, from evening aperitifs with cold, crisp snap peas to dinners of roast asparagus and spinach salads.

$11.25 per bottle shelf price, Wine of the Week price is $9.65. As part of our Pairing of the Week, $10 gets you a glass of the de Puoy and a hunk of aged goat's milk gouda, firm and buttery with small traces of crystalized salt. The goat's milk taste is apparent,not overpowering,and leads into a rich, almost caramel sweetness with slight hints of tartness. It carries a consistency much like other older Goudas, despite its relatively young age of 1 1/2 to 2 years. If you love Gouda or if you are just curious, this will surely be a splendid (perhaps even life-changing) discovery!
